Harvester working among the olive trees, with the Andean foothills behind

The Mill

The best of every olive, in every drop.

We produce under rigorous control at every stage, to keep the quality of the olive intact. With farm and mill under one roof, we act on every variable of the process.

  1. Harvester unloading olives into the hopper, seen from above

    Harvest

The fruit goes from the grove to the mill without waiting.

  2. Olives going up the cleaning machine's conveyor

    Cleaning

It is sorted and cleaned before milling.

  3. Inside the Olivaterra mill, with its processing lines

    Milling

The olives are crushed and the paste is malaxed to help the oil separate.

  4. Oil flowing out of the vertical centrifuge

    Separation

Decanter and vertical centrifuge: oil, pomace and vegetation water.

  5. Stainless steel tanks

    Storage

Temperature-controlled tanks, with no oxygen or light.

Quality and traceability

From harvest to tank in under 3 hours.

Olives don't wait: they are harvested, travel to the mill and in under three hours they are oil, stored in their tank.
